Back To Basics (Done Well)

How do you make an over done American classic modern? You do it extremely well: strip it down, cut out the unneeded sugar and introduce a new element (or two).

Progression

Comprising the menu is one of the most exciting parts of opening a restaurant. From idea, to formatting, testing and tasting, it is amazing to see the progression of your work. Like designing a collection of pieces in an art collection, no detail is overlooked. I love to have a full plate and this opening is covering the table. I couldn't be anymore exited.
