Course 24: Happy Endings, three to four bites of surprises. After 23 courses, I was up for a challenge to still entertain the guests and keep their attention. Petit fours are usually a little heavier and sweeter, to sit on the guest's palette even when their gone. I wanted to convey large flavors on a smaller and lighter scale, still keeping their attention yet not sending them into overload. Opening week's happy endings were:
